Prior to joining the Clevelander South Beach hotel project, in October 2003, Haas opened the much-anticipated Chispa, an energetic, contemporary Latin restaurant and bar inspired by the history and traditions of the Hispanic culture. This Coral Gables hot spot continues to ignite dining enthusiasts with passionate creations of customary Hispanic dishes blending authentic cuisine with bold architectural designs of the Old Caribbean in a New World setting.
Since arriving in South Florida in 1988, Haas has been involved with an impressive list of venues including the Four Seasons Ocean Grand, the Colony Bistro in Miami Beach, China Grill Café and Red Square. One of the founding fathers of New World Cuisine and a trendsetter for Miami’s notorious fine dining scene, Haas’ use of Southern ingredients and locally procured product put South Florida cuisine on the international map while preserving the culinary heritage of the region – all to the delight of Miami natives and visitors alike.
